Today I baked a B.E.M Cake (Butterless,Eggless,Milkless Cake)

   This recipe which I whipped up today is an old war time recipe :)

 

   I baked up a B.E.M cake (Butterless,Eggless,Milkless Cake). I didn't add the raisins to it as I was trying to make it even more frugal. Its texture turned out a bit heavy/doughy but it was still good. I think next time I will add 2 tbsps of shortening to it as well and see how that turns out.

 

  When I tasted the B.E.M cake I closed my eyes and pictured all the little children who couldn't wait to have a taste of this cake as eggs,milk and fats were hard to come by not to mention candy durring the war! It sort of takes me back on how they felt and how excited they must have been to be able to have such a treat. Not to mention how the Mother/Father and Grandparents must have savored every last crumb too .

 

   Here is the recipe I used minus the 2 tbsp of shortening and raisins........next time I will add the shortening but I will still leave out the raisins.

B.E.M CAKE

1 cup  raisins
2 tablespoons shortening
2 teaspoons cinnamon
1 teaspoon nutmeg

Bring to a boil then simmer for 10 minutes. Let cool (very important part) and then add the liquid to 2 cups of flour and 1 tsp of baking soda and one cup of white sugar.

 

Bake at 350 till done.

   I thought today would be a no spend day....I was bound and determined but, today is dhs mothers birthday and we always send money, they live so far away. I transfered her birthday money today into her bank account. Soooooo hopefully tomorrow will be that no spend day.

 
    This friday is payday and since I have revamped our budget I am truly excited about starting this new plan.....Imagine, excited about paying bills LOL!  I am excited too as there will be room to pay some more $ into our emergency fund :). Life is so Good, We are truly Blessed!
 
     Well I had better get a move on and start preparing supper, we are eating shortly after 6pm tonight as one dd has soccer practice after school today.

I have always wanted to try one of those cakes. Thanks for sharing the recipe.

Isn't it funny how we now look forward to paying bills!! I look forward to getting the cc bills so I can see how much they have gone down!! We truly are "weird"!!

Cakes...

I think sugar was a real luxury then, too! I've never tried a BEM cake... usually ours have lots of those ingredients :O!! :D

I hope you like the stuffed peppers! It's my mom's recipe, and I like lots of tomato soup poured over mine ;)
