Menu Plan Monday 7/2

FAMILY SUPPERS (Weight Watchers points included when available):

  • SUNDAY:  tuna noodle casserole (7 points) with peas, biscuits
  • MONDAY: bratwurst (7 points) and ??  (I might make some mustard potato salad, not sure yet.)
  • TUESDAY: crockpot meatball subs  & homemade baked fries  Didn't get to these last week... we ordered a pizza instead!  A favorite, but using hoagie buns and regular cheese the subs would be a whopping 10 points each! I'm using smaller bread, low-fat cheese, and I always add oatmeal in with my hamburger... that's gotta cut down the points a bit, right?! 
  • WEDNESDAY:  We will be eating at my sister's house.   I'm taking my ranch red potato salad.  I'd post the recipe, but it's one of those things I just sort of throw together "by feel" -- I use quartered red potatoes, sharp cheddar cheese, green onions, parsley, and ranch salad dressing.   Combine and chill.... yum!
  • THURSDAY:  TBA.. most likely enchiladas or fajitas.
  • FRIDAY: crockpot Chicken for the Gods (As written, it's 11 points per serving, but I use four chicken breast halves rather than six whole breasts to serve four people.. that's obviously going to reduce the points) with rice and steamed broccoli

Good for you on your strong efforts to stay on program! I love how flexible WW can be. :)
We're having brats this week, too. I love them.
Do you ever go on the WW message boards? On the recipe review board there are a ton of great finds, too. :)

Enchiladas

Thanks for the comment about my meal plan! You can't really taste the italian dressing... supposedly it's just supposed to soften up the tortillas so they won't crack when the enchiladas are baking (although they do crack, a lot of the time)... I guess they figure using light dressing is healthier than plain oil?? Also, it gives them a chance to push their product! :)
